Simple Oat Slice
This versatile oat slice is fast becoming a favourite at Liz’s house. It's great for the lunchbox, a healthy work snack, or for pudding.
- 1 egg, lightly beaten*
- 125 grams butter, melted
- 1/3-1/2 cup brown sugar (depending on your taste)**
- 1 teaspoon vanilla essence
- 1 1/2 cup rolled oats
- 1/2 cup plain flour
- 3/4 cup dried fruit of your choice – raisins, sultanas, dates, dried apricots, cranberries…
- Optional – 1/4c coconut thread, sunflower seeds, mixed nuts, chocolate chips
Turn on the oven to 180 C
*If you want to make it egg free, mix 1 Tbsp chia seeds with 2 Tbsp of water and let it sit for 10 minutes til it becomes gel like. Use this in place of an egg
- Mix the sugar** and melted butter together
- Add in the egg* (or chia seed replacement) and vanilla essence
- Mix in the flour
- Add rolled oats
- Add dried fruit
- Pour into a lined slice tin and back at 180 degrees for 20-25 minutes until golden.
Cool & slice into squares.
** You can swap the brown sugar for white sugar or coconut sugar. You could even try it with a date or banana puree in place of sugar. I soaked 1/2c of dates in boiling water for 15 minutes and then drained off the liquid and pureed it. Mix the date puree and 2 tablespoons of honey instead of sugar and it got the tick of approval from the sugar-junkie in the house.
Note: I cooked ours in our bench top oven, hence it’s a bit darker on top (and food photography is obviously not my forte!)
The first batch was made with sultana, date, coconut and choc chips. The second was date, sunflower seed, coconut and walnut and iced half with lemon icising. Both batches were equally good!
